Roast a Whole Beef Fillet with Herb Rub for a Delicious Meal

This recipe guides you through preparing a tender and flavourful whole beef fillet using simple ingredients and techniques. Perfect for a special occasion or celebratory dinner, this dish is sure to impress.


Before you begin:

Be sure your beef fillet is at room temperature for about 30 minutes before cooking.


Ingredients:

  • 2 to 3 pounds (900 grams to 1.4 kilograms) whole beef fillet

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon fresh thyme, chopped

  • Salt and freshly ground black pepper, to taste

Instructions:


  1. Preheat your oven to 425°F (220°C).

  2. Prepare the herb rub: In a small bowl, combine the minced garlic, rosemary, thyme, salt, and pepper. Mix well.

  3. Sear the beef: Heat olive oil in a large skillet over medium-high heat. Sear the beef fillet on all sides for 2-3 minutes, or until browned. Don't forget the ends!

  4. Season and roast: Generously coat the seared beef with the herb rub. Place it on a roasting rack in a baking dish. Insert a meat thermometer into the thickest part of the fillet, ensuring it doesn't touch the pan. Roast for approximately 25-30 minutes, or until the internal temperature reaches your desired level of doneness:

  • 125°F (52°C) for rare

  • 135°F (57°C) for medium-rare

  • 145°F (63°C) for medium

  • Adjust cooking time based on thickness and preference.

  1. Rest and slice: Remove the beef from the oven and let it rest on a cutting board for 10-15 minutes. Slice into desired thickness (about 1/2 inch or 1.25 cm) and serve with your favourite sides.

Tips:

  • For extra flavour, marinate the beef in the herb rub for several hours or overnight in the refrigerator.

  • Adjust cooking time based on the thickness of the fillet and desired doneness.

  • Always use oven mitts when handling hot pans and transferring the beef.

  • Cooking times may vary depending on your oven and the size of the beef. Use a meat thermometer for accurate doneness.
